About the Event

Pune 'Science on Tap' started as an idea to bring together scientists and the public in a casual environment. The aim is to get people talking about science while having a beer, and to help everyone realise that science and scientists are neither scary nor boring.


Great State Aleworks is a Pune-based craft brewery focused on modern & experimental ales using local ingredients, with an emphasis on juicy IPAs, tangy sours and millet ales!


We are delighted to host you at our brewery in the midst of fermenting beer in our fermenting tanks, for this edition of Science of Tap.


Topic: The Science Behind Dosas

What is common between our crispy dosas and the Ethiopian injera? Both are tasty types of flatbreads of course, and… both are full of microorganisms that make them so tasty! We are surrounded by microbes in every way – these little organisms are in and on our bodies (and perhaps in our brains too, the scientists say!), in our bathrooms and kitchens, in our gardens, and definitely in our food. These small but mighty microbes are capable of some of the most fascinating phenomena we see around us too – making rain, making soil from the vegetable peels you tossed into the ground, and of course, making some of the tastiest foods we know. Come learn more about how these tiny creatures are capable of so much, especially in our food.


About Amrita Hazra

Amrita Hazra is a scientist and teacher at the Indian Institute of Science Education and Research (IISER) Pune. Growing up with scientists as parents, the kitchen was her first lab, where she saw exciting chemistry and biology happen in her food. She followed the trail and did a Ph.D. in chemistry and a postdoc in microbiology, before joining IISER Pune, where she works with her group of budding researchers on understanding how vitamins are made in Nature by microbes. When she’s not at work, you will find her talking and thinking or writing about millets, or in her kitchen trying out a new food experiment… ahem recipe.
